Description

This Southwestern Chicken Salad is a vibrant and flavorful dish that combines tender chicken with black beans, corn, avocado, and a zesty lime dressing. Perfect for a quick and healthy meal!


Ingredients

Salad:

  • 2 cups cooked chicken breast, chopped or shredded
  • 1 cup canned black beans, rinsed and drained
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 red bell pepper, diced
  • ½ red onion, finely chopped
  • 1 avocado, diced
  • ½ cup cherry tomatoes, halved
  • ¼ cup chopped fresh cilantro
  • 4 cups chopped romaine lettuce

Dressing:

  • 1 teaspoon ground cumin
  • juice of 1 lime
  • 2 tablespoons olive oil
  • salt and pepper to taste


Instructions

  1. In a large mixing bowl, combine the cooked chicken, black beans, corn, red bell pepper, red onion, avocado, cherry tomatoes, and cilantro.
  2. In a small bowl, whisk together the cumin, lime juice, olive oil, salt, and pepper.
  3. Pour the dressing over the salad ingredients and toss gently to coat everything evenly.
  4. Add the chopped romaine lettuce and toss again just before serving.
  5. Serve immediately or chill for up to 2 hours before serving for best flavor.

Notes

  • For extra heat, add diced jalapeños or a pinch of chili powder to the dressing.
  • You can also serve this salad in taco shells or with tortilla chips for added crunch.
