Description

A comforting and flavorful Southwest-inspired twist on a classic tater tot hotdish. This easy-to-make casserole features a savory mix of black beans, corn, and spices topped with sweet potato tater tots and melted cheddar cheese.


Ingredients

Main Dish:

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 cup frozen corn
  • 1 (10-ounce) can diced tomatoes with green chilies (like Rotel)
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 2 cups shredded cheddar cheese
  • 1 (20-ounce) bag sweet potato tater tots (frozen)

Optional Toppings:

  • Chopped cilantro
  • Green onions
  • Sour cream
  • Avocado


Instructions

  1. Preheat oven to 400°F (200°C). In a large skillet over medium heat, heat olive oil. Add onion and red bell pepper, cook until soft. Stir in garlic, cook another 1–2 minutes.
  2. Add black beans, corn, diced tomatoes, spices, salt, and pepper. Stir and simmer until slightly thickened.
  3. Transfer mixture to greased baking dish, top with cheese. Arrange tater tots on top. Bake uncovered until crispy and golden.
  4. Cool slightly, top with optional ingredients, and serve.

Notes

  • For a spicier version, add chopped jalapeños or extra chili flakes.
  • To make it meaty, stir in cooked ground turkey or chorizo with the beans.
  • Leftovers reheat well and make a great lunch the next day.
