Description

This Southwest Corn Dip is a creamy and flavorful party dip that is perfect for gatherings. Packed with corn, black beans, cheese, and spices, it’s a crowd-pleaser that can be served cold with tortilla chips or warm with crackers.


Ingredients

Main Ingredients:

  • 2 cups frozen corn (thawed)
  • 1 cup canned black beans (drained and rinsed)
  • 1 cup diced red bell pepper
  • 1 cup shredded cheddar cheese

Sauce Mixture:

  • ½ cup sour cream
  • ½ cup mayonnaise
  • 1 (4 oz) can diced green chiles
  • ¼ cup chopped red onion
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ½ teaspoon garlic powder
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh cilantro
  • Juice of 1 lime

Instructions

  1. Combine Ingredients: In a large bowl, mix the corn, black beans, red bell pepper, cheddar cheese, sour cream, mayonnaise, green chiles, red onion, chili powder, cumin, garlic powder, salt, and pepper until well combined.
  2. Add Flavor: Stir in the cilantro and lime juice.
  3. Chill: Cover and refrigerate for at least 30 minutes to allow the flavors to blend.

Notes
