Ingredients
For the filling:
- 2 cups cooked and shredded chicken breast
- 1 cup cooked corn kernels (fresh, frozen, or canned)
- 1 cup canned black beans (rinsed and drained)
- 1/2 cup diced red bell pepper
- 1/4 cup diced red onion
- 1/2 cup shredded cheddar or pepper jack cheese
For the sauce:
- 1/2 cup sour cream or Greek yogurt
- 2 tablespoons mayonnaise
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
- 4 large flour tortillas
- 1/4 cup chopped fresh cilantro (optional for garnish)
Instructions
- In a large bowl, combine the chicken, corn, black beans, red bell pepper, red onion, and shredded cheese.
- Pour the sauce over the chicken mixture and stir until everything is evenly coated.
- Warm the tortillas slightly to make them pliable.
- Divide the filling evenly among the tortillas, spooning it down the center of each one.
- Roll up the tortillas tightly like a burrito, tucking in the sides as you go.
- Slice in half and serve immediately, or wrap tightly and refrigerate for later.
In a small bowl, mix together the sour cream, mayonnaise, lime juice, chili powder, cumin, garlic powder, salt, and pepper until smooth.
