Description

These Southwest Chicken Wraps are a delicious and easy-to-make meal perfect for lunch or dinner. Packed with flavorful ingredients like chicken, black beans, corn, and cheese, these wraps are sure to satisfy your cravings.


Ingredients

For the filling:

  • 2 cups cooked and shredded chicken breast
  • 1 cup cooked corn kernels (fresh, frozen, or canned)
  • 1 cup canned black beans (rinsed and drained)
  • 1/2 cup diced red bell pepper
  • 1/4 cup diced red onion
  • 1/2 cup shredded cheddar or pepper jack cheese

For the sauce:

  • 1/2 cup sour cream or Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • 4 large flour tortillas
  • 1/4 cup chopped fresh cilantro (optional for garnish)

Instructions

  1. In a large bowl, combine the chicken, corn, black beans, red bell pepper, red onion, and shredded cheese.
  2. In a small bowl, mix together the sour cream, mayonnaise, lime juice, chili powder, cumin, garlic powder, salt, and pepper until smooth.

  3. Pour the sauce over the chicken mixture and stir until everything is evenly coated.
  4. Warm the tortillas slightly to make them pliable.
  5. Divide the filling evenly among the tortillas, spooning it down the center of each one.
  6. Roll up the tortillas tightly like a burrito, tucking in the sides as you go.
  7. Slice in half and serve immediately, or wrap tightly and refrigerate for later.

Notes

  • These wraps can be made ahead and stored in the fridge for up to 3 days.
