Ingredients
Chicken Mixture:
- 2 cups cooked chicken breast (shredded or sliced)
- ½ cup canned black beans (rinsed and drained)
- ½ cup corn kernels (fresh, canned, or thawed from frozen)
- ½ cup diced tomatoes or salsa
- ¼ cup diced red onion
- ½ avocado (sliced)
- ½ cup shredded cheddar or pepper jack cheese
- ¼ cup sour cream or Greek yogurt
- 1 tbsp lime juice
- ½ tsp chili powder
- ½ tsp cumin
- ¼ tsp garlic powder
- Salt and pepper to taste
Additional:
- 4 large flour tortillas
- Handful of chopped romaine or mixed greens
Instructions
- Prepare the Chicken Mixture: In a bowl, mix the chicken, black beans, corn, tomatoes or salsa, red onion, cheese, lime juice, chili powder, cumin, garlic powder, salt, and pepper until evenly combined.
- Assemble the Wraps: Warm the tortillas in a dry skillet or microwave until pliable. Spread a spoonful of sour cream or Greek yogurt onto each tortilla. Layer with the chicken mixture, sliced avocado, and a handful of greens. Fold in the sides and roll up tightly to form a wrap.
