Description

This Southwest Chicken Wrap is a delicious and easy-to-make meal that’s perfect for lunch or a quick dinner. Packed with flavorful ingredients and wrapped in a tortilla, it’s a satisfying and nutritious option.


Ingredients

Chicken Mixture:

  • 2 cups cooked chicken breast (shredded or sliced)
  • ½ cup canned black beans (rinsed and drained)
  • ½ cup corn kernels (fresh, canned, or thawed from frozen)
  • ½ cup diced tomatoes or salsa
  • ¼ cup diced red onion
  • ½ avocado (sliced)
  • ½ cup shredded cheddar or pepper jack cheese
  • ¼ cup sour cream or Greek yogurt
  • 1 tbsp lime juice
  • ½ tsp chili powder
  • ½ tsp cumin
  • ¼ tsp garlic powder
  • Salt and pepper to taste

Additional:

  • 4 large flour tortillas
  • Handful of chopped romaine or mixed greens

Instructions

  1. Prepare the Chicken Mixture: In a bowl, mix the chicken, black beans, corn, tomatoes or salsa, red onion, cheese, lime juice, chili powder, cumin, garlic powder, salt, and pepper until evenly combined.
  2. Assemble the Wraps: Warm the tortillas in a dry skillet or microwave until pliable. Spread a spoonful of sour cream or Greek yogurt onto each tortilla. Layer with the chicken mixture, sliced avocado, and a handful of greens. Fold in the sides and roll up tightly to form a wrap.
  3. Serve: Slice in half and serve immediately, or wrap in foil for on-the-go meals.
