Description

These Southern Tea Cake Cookies are a delightful treat with a soft, cake-like texture and a hint of sweetness. Perfect for any occasion, these cookies are easy to make and even easier to enjoy!

Ingredients

Cookie Dough:

  • 1 cup unsalted butter (softened)
  • 1 ½ cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ teaspoon lemon extract (optional)
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 23 tablespoons whole milk

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F and line baking sheets with parchment paper.
  2. Cream Butter and Sugar: In a large bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add Eggs and Extracts: Beat in the eggs one at a time, then mix in the vanilla and lemon extract.
  4. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
  5. Mix Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, mixing just until combined. Add milk a tablespoon at a time until a soft dough forms.
  6. Shape and Bake: Roll the dough into 1-inch balls or scoop with a cookie scoop and place on prepared baking sheets. Flatten slightly and bake for 10–12 minutes until lightly golden. Cool on the baking sheet before transferring to a wire rack.

Notes

  • These cookies are soft and cake-like with a subtle sweetness.
  • You can dust them with powdered sugar or glaze them for extra flair.
  • The lemon extract adds a bright flavor but can be omitted for a more traditional taste.
