Description

These Southern-Style Honey Butter Cornbread Poppers are bite-sized, sweet, and fluffy cornbread treats baked to golden perfection. Infused with honey and buttermilk, they offer a moist texture with a delightful buttery flavor, perfect as a snack or a side dish for any meal.

Ingredients

Dry Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt

Wet Ingredients

  • 1 cup buttermilk
  • 1/2 cup melted butter
  • 1/4 cup honey
  • 2 eggs

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 400°F (200°C) and grease a mini muffin tin to prevent sticking.
  2. Combine Dry Ingredients: In a large bowl, thoroughly mix cornmeal, all-purpose flour, sugar, baking powder, and salt to evenly distribute the leavening and seasoning.
  3. Mix Wet Ingredients: In a separate bowl, whisk together buttermilk, melted butter, honey, and eggs until the mixture is smooth and well combined.
  4. Combine Wet and Dry Mixtures: Pour the wet ingredients into the dry ingredients and gently stir until just combined. Avoid overmixing to keep the cornbread tender.
  5. Fill Muffin Tin: Spoon the batter into the prepared mini muffin tin, filling each cup about three-quarters full for proper rising.
  6. Bake: Place the muffin tin in the oven and bake for 12-15 minutes until the poppers are golden brown and a toothpick inserted in the center comes out clean.
  7. Cool and Serve: Allow the cornbread poppers to cool slightly in the tin before removing and serving warm.

Notes

  • To enhance flavor, drizzle extra honey or spread additional butter on warm poppers before serving.
  • For a spicy kick, add a pinch of cayenne pepper or chopped jalapeños to the batter.
  • These poppers freeze well; store in an airtight container and reheat in the oven before serving.
  • Use fresh baking powder to ensure the batter rises properly.
