Ingredients
Dry Ingredients
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
Wet Ingredients
- 1 cup buttermilk
- 1/2 cup melted butter
- 1/4 cup honey
- 2 eggs
Instructions
- Preheat Oven and Prepare Pan: Preheat your oven to 400°F (200°C) and grease a mini muffin tin to prevent sticking.
- Combine Dry Ingredients: In a large bowl, thoroughly mix cornmeal, all-purpose flour, sugar, baking powder, and salt to evenly distribute the leavening and seasoning.
- Mix Wet Ingredients: In a separate bowl, whisk together buttermilk, melted butter, honey, and eggs until the mixture is smooth and well combined.
- Combine Wet and Dry Mixtures: Pour the wet ingredients into the dry ingredients and gently stir until just combined. Avoid overmixing to keep the cornbread tender.
- Fill Muffin Tin: Spoon the batter into the prepared mini muffin tin, filling each cup about three-quarters full for proper rising.
- Bake: Place the muffin tin in the oven and bake for 12-15 minutes until the poppers are golden brown and a toothpick inserted in the center comes out clean.
- Cool and Serve: Allow the cornbread poppers to cool slightly in the tin before removing and serving warm.
Notes
- To enhance flavor, drizzle extra honey or spread additional butter on warm poppers before serving.
- For a spicy kick, add a pinch of cayenne pepper or chopped jalapeños to the batter.
- These poppers freeze well; store in an airtight container and reheat in the oven before serving.
- Use fresh baking powder to ensure the batter rises properly.
