Instructions

  1. Prepare Vegetables: Heat olive oil in a large pot or Dutch oven over medium heat. Add diced onion and green bell pepper, cooking for 3–4 minutes until softened and fragrant.
  2. Add Garlic: Stir in minced garlic and cook for 30 seconds until fragrant, taking care not to burn.
  3. Cook Meat: Add ground beef or turkey to the pot. Cook for 6–8 minutes, breaking the meat apart with a spoon, until browned and cooked through. Drain excess fat if necessary.
  4. Season Meat: Stir in chili powder, smoked paprika, cumin, brown sugar, cayenne pepper, salt, and black pepper to coat the meat evenly.
  5. Add Tomato Paste: Mix in tomato paste to blend with the seasoned meat, intensifying the flavor base.
  6. Combine Beans and Tomatoes: Pour in diced tomatoes, tomato sauce, kidney beans, and black beans. Stir well to combine all ingredients.
