- 1 (14.5-ounce) can diced tomatoes (with juices)
- 1 1/2 cups shredded cheddar cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup water or beef broth

Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish with cooking spray.
- Cook the ground beef: Brown the ground beef in a skillet over medium heat, drain excess fat, and season with garlic powder, paprika, salt, and pepper.
- Layer the ingredients: In the baking dish, layer rice, corn, bell pepper, onion, cooked beef, and diced tomatoes.
- Add liquid: Pour water or beef broth over the casserole, cover with foil, and bake for 1 hour.
- Add cheese: Uncover, sprinkle cheddar cheese on top, and bake for an additional 5–10 minutes until melted.
