Ingredients
Dough:
- 1 cup unsalted butter (softened)
 - 1 cup granulated sugar
 - 1 large egg
 - 1½ teaspoons vanilla extract
 - ½ teaspoon almond extract (optional)
 - 2½ cups all-purpose flour
 - ¾ teaspoon baking powder
 - ¼ teaspoon salt

Instructions
- Cream Butter and Sugar: In a large bowl, cream together the softened butter and sugar until light and fluffy, about 2–3 minutes.
 - Add Wet Ingredients: Add the egg, vanilla extract, and almond extract (if using), and beat until well combined.
 - Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms.
 - Chill Dough: Divide the dough in half, flatten into discs, and wrap in plastic wrap. Chill in the refrigerator for at least 1 hour.
 - Roll and Cut: Preheat the oven to 350°F (175°C) and roll out one disc of dough to about ¼-inch thickness. Use cookie cutters to cut out shapes and transfer to baking sheets.
 - Bake: Bake for 8–10 minutes until edges are barely golden. Cool on sheet for 2 minutes, then transfer to a wire rack to cool completely.
