Ingredients
Dry Ingredients:
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Wet Ingredients:
- 1/2 cup unsalted butter, softened
- 1/2 cup creamy peanut butter
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
Mix-Ins:
- 1 cup quick oats
- 1/2 cup mini chocolate chips
- 1/2 cup mini M&M’s
- 1/4 cup chopped peanuts (optional)
Instructions
- Preheat Oven: Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Cream Ingredients: In a large bowl, cream together butter, peanut butter, brown sugar, and granulated sugar until light and fluffy. Add egg and vanilla; mix well.
- Combine Dry Ingredients: In a separate bowl, whisk flour, baking soda, and salt. Gradually add to wet mixture, mixing until just combined.
- Add Mix-Ins: Stir in oats, chocolate chips, M&M’s, and peanuts if using.
- Bake: Scoop dough onto baking sheets, bake for 9–11 minutes until edges are golden. Cool on sheet before transferring to a wire rack.
Notes
- For softer cookies, slightly underbake and let them finish setting on the baking sheet.
- Try peanut butter chips or white chocolate chips for a different twist.
