Instructions
- Prepare the Pudding Mixture: In a medium saucepan, whisk together sugar, cornstarch, and salt. Gradually whisk in milk until smooth. Cook over medium heat, whisking constantly, until thickened and bubbling, about 5–7 minutes.
- Temper the Egg Yolks: In a small bowl, beat egg yolks. Slowly whisk in 1/2 cup of hot milk mixture to temper the yolks. Pour yolk mixture back into the saucepan, whisking continuously. Cook for 1–2 more minutes until thickened.
- Finish the Pudding: Remove from heat, stir in butter and vanilla extract. Pour into serving dishes, cover with plastic wrap, and chill in the refrigerator for at least 2 hours.
