Perfect for a quick treat, this cake requires no eggs or oil and offers a moist, tender crumb that pairs well with whipped topping or enjoyed plain.
Ingredients
Dry Ingredients
- 1 box (15.25 oz) yellow cake mix
Wet Ingredients
- 1 can (12 oz) lemon-lime soda (such as Sprite or 7UP)
- Optional: 1 tsp vanilla extract
For the Pan
- Nonstick cooking spray or butter for greasing the pan
Serving
- Optional: 1 cup whipped topping for serving
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan using nonstick cooking spray or butter to ensure the cake doesn’t stick.
- Mix Cake Batter: In a large mixing bowl, combine the yellow cake mix and lemon-lime soda. Stir together until the batter is smooth and free of dry lumps, which should take about 1 to 2 minutes. If using, add the vanilla extract and mix well.
- Pour Batter into Pan: Pour the prepared batter evenly into the greased baking pan and smooth the top with a spatula for an even bake.
- Bake the Cake: Place the pan in the preheated oven and bake for 25 to 30 minutes. To check doneness, insert a toothpick into the center of the cake; it should come out clean when done.
- Cool and Serve: Allow the cake to cool completely in the pan on a wire rack before slicing. Serve plain or top with whipped topping if desired for extra richness and flavor.
Notes
- You can substitute the lemon-lime soda with any other soda flavor like cola, root beer, or orange soda to create different taste variations.
- Avoid using diet sodas as they can negatively affect the texture of the cake.
- Adding vanilla extract is optional but enhances flavor and aroma.
- For an even simpler dessert, serve the cake plain without any frosting or toppings.
