Description

These Snowball Cookies are a classic holiday treat, perfect for gifting or enjoying with a cup of hot cocoa. With a buttery, nutty flavor and a snowy coating of powdered sugar, these cookies melt in your mouth with each bite.


Ingredients

1 cup unsalted butter (softened)

  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 3/4 cup finely chopped pecans or walnuts
  • additional powdered sugar for rolling


Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream butter and sugar: In a large mixing bowl, cream the butter and powdered sugar until light and fluffy. Mix in the vanilla extract.
  3. Add dry ingredients: Add the flour and salt, and mix until just combined. Stir in the chopped nuts.
  4. Shape the cookies: Scoop tablespoon-sized portions of dough and roll into balls. Place on the prepared baking sheet.
  5. Bake: Bake for 12 to 14 minutes until lightly golden. Let cool for 5 minutes.
  6. Coat with sugar: Roll warm cookies in powdered sugar. Cool completely on a wire rack, then roll again in powdered sugar for a snowy finish.

Notes

  • These cookies can be made with almonds or hazelnuts instead of pecans or walnuts.
  • Store in an airtight container for up to 1 week.
