These Snickerdoodle Cheesecake Bites are a delightful fusion of creamy cheesecake and the warm, comforting flavors of snickerdoodle cookies. Perfect for parties or a sweet treat any time!
Ingredients
Cheesecake Filling:
- 8 oz cream cheese (softened)
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 large egg
- 1 tablespoon all-purpose flour
- 1/2 teaspoon ground cinnamon
- 1/2 cup crushed snickerdoodle cookies or cinnamon graham crackers
Coating:
- 1/4 cup cinnamon-sugar mixture
Instructions
- Preheat Oven: Preheat oven to 325°F (163°C) and prepare a mini muffin tin with liners or grease.
- Prepare Cheesecake Filling: In a bowl, beat cream cheese, sugar, and vanilla until smooth. Add egg, flour, and cinnamon, mix well. Stir in crushed cookies or graham crackers.
- Fill Muffin Cups: Spoon batter into cups, filling each 3/4 full.
- Bake: Bake for 15–18 minutes until set. Cool in pan for 10 minutes, then transfer to a rack.
- Coat: While warm, roll or sprinkle tops with cinnamon-sugar. Chill for at least 1 hour before serving.
Notes
- For variety, top with a mini snickerdoodle or whipped cream.
- Store in the fridge for up to 4 days.
