Description

These Snickerdoodle Cheesecake Bites are a delightful fusion of creamy cheesecake and the warm, comforting flavors of snickerdoodle cookies. Perfect for parties or a sweet treat any time!


Ingredients

Cheesecake Filling:

  • 8 oz cream cheese (softened)
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 tablespoon all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup crushed snickerdoodle cookies or cinnamon graham crackers

Coating:

  • 1/4 cup cinnamon-sugar mixture

Instructions

  1. Preheat Oven: Preheat oven to 325°F (163°C) and prepare a mini muffin tin with liners or grease.
  2. Prepare Cheesecake Filling: In a bowl, beat cream cheese, sugar, and vanilla until smooth. Add egg, flour, and cinnamon, mix well. Stir in crushed cookies or graham crackers.
  3. Fill Muffin Cups: Spoon batter into cups, filling each 3/4 full.
  4. Bake: Bake for 15–18 minutes until set. Cool in pan for 10 minutes, then transfer to a rack.
  5. Coat: While warm, roll or sprinkle tops with cinnamon-sugar. Chill for at least 1 hour before serving.
