Ingredients
Sugar Cookie Crust:
- 1 package (16.5 oz) refrigerated sugar cookie dough
- 1/4 cup granulated sugar
- 1 tablespoon ground cinnamon
Cheesecake Filling:
- 2 packages (8 oz each) cream cheese, softened
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 2 tablespoons all-purpose flour
Instructions
- Prepare the Crust: Preheat the oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper or lightly grease it. Press the sugar cookie dough evenly into the bottom of the pan to form a crust.
- Make the Cinnamon Sugar Topping: In a small bowl, mix 1/4 cup sugar with cinnamon and sprinkle half of the mixture over the cookie dough.
- Prepare the Cheesecake Filling: In a large bowl, beat the cream cheese, 1/2 cup sugar, and vanilla extract until smooth. Add the eggs one at a time, beating well after each addition. Mix in the flour until combined.
- Assemble and Bake: Pour the cheesecake mixture evenly over the cookie dough crust. Sprinkle the remaining cinnamon sugar over the top. Bake for 30–35 minutes or until the center is set and the edges are lightly golden.
- Cool and Chill: Let cool completely, then refrigerate for at least 2 hours before slicing into bars.
Notes
- For extra flavor, add a pinch of nutmeg to the cinnamon-sugar mixture.
- These bars can be made a day ahead and stored chilled.
