Ingredients
Filling
- 2 cups cooked shredded chicken (rotisserie works well)
- 1 cup cooked rice (white, brown, or Mexican-style)
- 1 cup black beans, rinsed and drained
- 1 cup shredded cheddar or Monterey Jack cheese, divided
- 1/2 cup salsa
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
Assembly and Topping
- 6 large flour tortillas
- 1 cup red enchilada sauce
- 1/2 cup sour cream
- 1/4 cup chopped cilantro (optional)
Instructions
- Preheat and prepare dish: Preheat the oven to 375°F (190°C) and grease a large baking dish to prevent sticking.
- Mix filling: In a large bowl, combine shredded chicken, cooked rice, black beans, half of the shredded cheese, salsa, chili powder, cumin, salt, and pepper. Stir well to evenly distribute the spices and ingredients.
- Assemble burritos: Lay out the flour tortillas flat. Spoon an equal portion of the chicken mixture onto each tortilla. Roll each tortilla tightly and place seam-side down in the prepared baking dish.
- Prepare sauce topping: In a small bowl, mix the red enchilada sauce with the sour cream until smooth. Pour this creamy sauce evenly over the arranged burritos in the baking dish.
- Add cheese and cover: Sprinkle the remaining shredded cheese on top of the sauced burritos. Cover the dish with aluminum foil to retain moisture while baking.
- Bake covered: Place the baking dish in the oven and bake covered for 20 minutes to heat through and allow flavors to meld.
- Finish baking uncovered: Remove the foil and continue baking for an additional 10 minutes until the cheese on top is bubbly and golden brown.
- Garnish and serve: Remove from oven and sprinkle with chopped cilantro if desired. Serve warm and enjoy your smothered baked chicken burritos.
Notes
- Use rotisserie chicken for a quicker preparation time.
- Feel free to substitute the black beans with pinto beans or refried beans for variation.
- Adjust the level of salsa and spices according to your taste preference.
- For a spicier version, add diced jalapeños or hot sauce into the filling.
- Leftovers can be refrigerated and reheated in the oven or microwave.
