Description

Ingredients

Meatloaf:

  • 1 ½ pounds ground beef
  • 4 ounces cream cheese (softened)
  • 1 cup shredded cheddar cheese
  • 2 jalapeños (seeded and finely chopped)
  • 1/2 cup cooked and crumbled bacon
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons milk

Creamy Ranch Drizzle:

  • 1/4 cup ranch dressing
  • 2 tablespoons sour cream
  • Chopped fresh parsley for garnish


Instructions

  1. Preheat the oven: Preheat the oven to 375°F.
  2. Mix meatloaf ingredients: In a large bowl, combine ground beef, cream cheese, cheddar, jalapeños, bacon, breadcrumbs, egg, paprika, garlic powder, onion powder, salt, pepper, and milk. Mix gently.
  3. Bake: Transfer the mixture to a loaf pan, shape into a loaf, and bake for 45-50 minutes until the internal temperature reaches 160°F.
  4. Prepare ranch drizzle: Mix ranch dressing and sour cream until smooth.
  5. Rest and serve: Let the meatloaf rest, then slice. Drizzle with ranch mixture, sprinkle parsley, and serve.

Notes

  • For extra heat, leave some jalapeño seeds in.
  • Ground turkey or pork can be used instead of beef.
  • The ranch drizzle can be served on the side for dipping.
