Ingredients
Meatloaf
- 1.5 lbs ground beef
- 1 cup breadcrumbs
- 1/2 cup diced jalapeños (seeded for less heat)
- 1 cup shredded cheddar cheese
- 1/2 cup cream cheese, softened
- 1/2 cup diced onions
- 2 cloves garlic, minced
- 2 eggs
- 1/4 cup milk
- 1 tbsp smoked paprika
- 1 tsp salt
- 1/2 tsp black pepper
Creamy Ranch Drizzle
- 1/2 cup ranch dressing
- 1 tbsp sour cream
- 1 tsp lime juice
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C). Prepare a loaf pan by greasing it lightly or lining it with parchment paper to prevent sticking.
- Mix Ingredients: In a large bowl, combine the ground beef, breadcrumbs, diced jalapeños, shredded cheddar cheese, softened cream cheese, diced onions, minced garlic, eggs, milk, smoked paprika, salt, and black pepper. Gently mix all ingredients until they are well incorporated without overworking the meat.
- Shape Loaf: Transfer the mixture into the prepared loaf pan and shape it evenly into a loaf form, ensuring it’s compact for even cooking.
- Bake: Place the loaf pan in the oven and bake for 50 to 60 minutes, or until the meatloaf is cooked through and reaches an internal temperature of 160°F (71°C).
- Prepare Ranch Drizzle: While the meatloaf bakes, mix together ranch dressing, sour cream, and lime juice in a small bowl until smooth and combined, forming the creamy ranch drizzle.
- Rest and Serve: Once cooked, let the meatloaf rest for 10 minutes outside the oven. After resting, drizzle the creamy ranch sauce evenly over the top before slicing and serving.
Notes
- For less heat, be sure to remove the seeds from jalapeños before dicing.
- Using both cream cheese and cheddar adds a creamy texture and sharp flavor that mimics jalapeño poppers.
- Resting the meatloaf allows juices to redistribute, ensuring a moist texture.
- Check internal temperature with a meat thermometer to ensure safety and doneness.
- Serve with a side of steamed vegetables or a fresh salad for a balanced meal.
