Ingredients
For Brine:
- 1 whole turkey (12–14 pounds)
- ½ cup kosher salt
- ¼ cup brown sugar
- 4 cups water
- 2 cups apple cider
For Seasoning:
- 2 tablespoons black pepper
- 1 tablespoon paprika
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 2 teaspoons dried thyme
- 1 teaspoon cayenne pepper (optional)
For Smoking:
- 1 apple (quartered)
- 1 onion (quartered)
- 4 sprigs fresh rosemary
- 4 sprigs fresh thyme
- ½ cup unsalted butter (melted)
- Wood chips (apple, hickory, or cherry preferred)
Instructions
- Prepare the Turkey: Thaw and pat dry the turkey. Brine for 12–24 hours. Rinse and pat dry again.
- Season the Turkey: Combine spices and rub all over the turkey. Stuff with apple, onion, rosemary, and thyme.
- Smoke the Turkey: Preheat smoker, add wood chips, and smoke the turkey until fully cooked.
- Rest and Serve: Let the turkey rest before carving and enjoy!
