Description

This Smoked Buffalo Chicken Queso Dip combines the smoky richness of slow-smoked chicken breast with creamy Velveeta and sharp cheddar cheeses, spicy buffalo wing sauce, and cooling ranch dressing. Perfectly melted and infused with smoky flavor, this dip is an irresistible appetizer for game days or gatherings.


Ingredients

Chicken and Seasonings

  • 1 pound boneless skinless chicken breast
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste

Cheeses and Sauces

  • 12 ounces Velveeta cheese, cubed
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup buffalo wing sauce
  • 1/2 cup ranch dressing
  • 1/4 cup cream cheese, softened

Add-Ins and Garnish

  • 1/2 cup diced tomatoes with green chiles, drained
  • 2 tablespoons chopped green onions (optional)


Instructions

  1. Preheat the smoker: Set your smoker to 250°F to ensure a slow and even cooking process for the chicken.
  2. Prepare the chicken: Rub the chicken breast with olive oil, smoked paprika, garlic powder, salt, and black pepper to season thoroughly before smoking.
  3. Smoke the chicken: Place the seasoned chicken directly on the smoker grates and let it smoke for 60 to 75 minutes until fully cooked and tender. Once done, shred or dice the chicken for the dip.
  4. Make the queso dip mixture: In a cast iron skillet or disposable aluminum pan, combine Velveeta cheese cubes, shredded cheddar, buffalo wing sauce, ranch dressing, cream cheese, diced tomatoes with green chiles, and the smoked shredded chicken.
  5. Smoke the queso dip: Place the pan back into the smoker and cook for 45 to 60 minutes. Stir the mixture every 15 minutes to help the cheeses melt evenly and allow the smoky flavor to infuse throughout the dip.
  6. Finish and serve: Remove the dip from the smoker once fully melted and smooth. Garnish with chopped green onions if desired, then serve warm for the best flavor experience.
