Ingredients
Chickpea Avocado Mash:
- 1 can (15 ounces) chickpeas, drained and rinsed
- 1 ripe avocado, peeled and pitted
Add-Ins:
- 1/3 cup chopped dill pickles
- 2 tablespoons pickle juice
- 1 tablespoon fresh dill (or 1/2 teaspoon dried)
- 1 tablespoon lemon juice
- 1/4 teaspoon garlic powder
- Salt and black pepper to taste
Assembly:
- 4–6 slices of whole grain bread
- Lettuce or spinach leaves (optional)
Instructions
- Prepare Chickpea Avocado Mash: In a medium bowl, mash chickpeas and avocado until slightly chunky.
- Add Flavor: Mix in pickles, pickle juice, dill, lemon juice, garlic powder, salt, and pepper.
- Adjust Seasoning: Taste and adjust seasoning as needed.
- Assemble: Spread the mixture onto bread slices, add lettuce or spinach, and serve.
Notes
