Ingredients
Chicken and Seasonings
- 2 pounds boneless, skinless chicken breasts
- 1 cup grated Parmesan cheese
- 1 tablespoon minced garlic
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup unsalted chicken broth
- 4 tablespoons unsalted butter, cut into pieces
Creamy Sauce
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1/2 teaspoon crushed red pepper flakes (optional)
To Serve
- 6 sandwich rolls or buns
- 1 cup shredded mozzarella cheese
- 1/2 cup baby spinach or arugula (optional)
Instructions
- Prepare the Chicken: Place the chicken breasts at the bottom of the slow cooker. Evenly sprinkle Parmesan cheese, minced garlic, garlic powder, onion powder, Italian seasoning, salt, and pepper over the chicken. Pour the chicken broth over the top and distribute the butter pieces across the surface.
- Cook the Chicken: Cover the slow cooker and cook on low heat for 5 to 6 hours, or on high heat for 3 to 4 hours, until the chicken is very tender and easily shredded.
- Shred the Chicken: Using two forks, shred the chicken directly in the slow cooker until it is pulled apart and fully combined with the cooking juices.
- Make the Creamy Mixture: Stir in the mayonnaise, sour cream, and crushed red pepper flakes if using. Mix well until the sauce is evenly blended and creamy with the shredded chicken.
- Prepare the Sandwiches: Toast the sandwich rolls or buns if desired to add crispness. Spoon the creamy Parmesan garlic chicken onto each bun.
- Add Toppings and Serve: Top the chicken mixture with shredded mozzarella and a handful of baby spinach or arugula if preferred. Serve warm for the best flavor and texture.
Notes
- You can substitute Greek yogurt for the sour cream for a healthier option.
- Add sliced pickles or roasted red peppers to the sandwiches for extra flavor and texture.
- To reduce calories, use light mayonnaise or serve the creamy chicken mixture in lettuce wraps instead of buns.
