Description

These Slow Cooker Parmesan Garlic Chicken Sandwiches are a delicious and satisfying dinner option that the whole family will love. Tender shredded chicken in a creamy garlic sauce, topped with Parmesan cheese and served on a soft bun – it’s a flavor-packed meal that’s easy to make.


Ingredients

Chicken:

  • 2 pounds boneless, skinless chicken breasts

Seasonings:

  • 1 cup grated Parmesan cheese (divided)
  • 1 tablespoon Italian seasoning
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Additional:

  • 1 cup chicken broth
  • 4 ounces cream cheese, softened
  • 4 cloves garlic, minced
  • ¼ cup chopped fresh parsley (or 1 tablespoon dried)
  • 6 sandwich rolls or brioche buns
  • Optional toppings: baby spinach, sliced provolone or mozzarella, roasted red peppers


Instructions

  1. Prepare the Chicken: Place chicken breasts in the slow cooker and season with ½ cup Parmesan, Italian seasoning, garlic powder, salt, pepper, and minced garlic. Pour chicken broth over the top.
  2. Cook: Cover and cook on low for 6–7 hours or high for 3–4 hours until chicken is tender and can be shredded.
  3. Shred and Add Creaminess: Remove chicken, shred it, then add cream cheese and remaining ½ cup Parmesan to the slow cooker. Stir until creamy.
  4. Combine and Serve: Return shredded chicken to the slow cooker, mix well with the sauce. Toast buns, then spoon chicken mixture onto the bottom half of each bun. Add desired toppings and serve.
