Ingredients
Chicken:
- 2 pounds boneless, skinless chicken breasts
Seasonings:
- 1 cup grated Parmesan cheese (divided)
- 1 tablespoon Italian seasoning
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ½ teaspoon black pepper
Additional:
- 1 cup chicken broth
- 4 ounces cream cheese, softened
- 4 cloves garlic, minced
- ¼ cup chopped fresh parsley (or 1 tablespoon dried)
- 6 sandwich rolls or brioche buns
- Optional toppings: baby spinach, sliced provolone or mozzarella, roasted red peppers
Instructions
- Prepare the Chicken: Place chicken breasts in the slow cooker and season with ½ cup Parmesan, Italian seasoning, garlic powder, salt, pepper, and minced garlic. Pour chicken broth over the top.
- Cook: Cover and cook on low for 6–7 hours or high for 3–4 hours until chicken is tender and can be shredded.
- Shred and Add Creaminess: Remove chicken, shred it, then add cream cheese and remaining ½ cup Parmesan to the slow cooker. Stir until creamy.
- Combine and Serve: Return shredded chicken to the slow cooker, mix well with the sauce. Toast buns, then spoon chicken mixture onto the bottom half of each bun. Add desired toppings and serve.
