Ingredients

Chicken:

  • 4 boneless, skinless chicken breasts

Sauce:

  • 1 (14.5 oz) can diced tomatoes
  • 1/2 cup sun-dried tomatoes in oil, drained and chopped
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon cornstarch (optional, for thickening)
  • 1/4 cup chopped fresh basil


Instructions

  1. Prepare Chicken: Place chicken breasts in the slow cooker.
  2. Add Ingredients: Add diced tomatoes, sun-dried tomatoes, garlic, salt, pepper, Italian seasoning, and chicken broth.
  3. Cook: Cover and cook on low for 5–6 hours or on high for 2.5–3 hours until chicken is tender.
  4. Finish Sauce: Remove chicken, stir in cream, Parmesan. Thicken with cornstarch if desired. Return chicken to slow cooker and cook for another 20–30 minutes.
