Description

This Slow Cooker Cowboy Casserole is a hearty and comforting dish perfect for a cozy family dinner. Packed with ground beef, beans, corn, and creamy goodness, it’s an easy-to-make meal that satisfies everyone’s taste buds.


Ingredients

Main Ingredients:

  • 1 pound ground beef
  • 1 small onion, chopped
  • 3 cloves garlic, minced

Additional Ingredients:

  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 1 can (10.5 ounces) condensed cream of mushroom soup
  • 1/2 cup sour cream
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 2 cups frozen diced hash brown potatoes
  • 1 1/2 cups shredded cheddar cheese, divided


Instructions

  1. Brown the Beef: In a skillet over medium heat, brown the ground beef with the onion and garlic until fully cooked. Drain excess fat.
  2. Mix Ingredients: In a large bowl, combine the beef mixture, beans, corn, soup, sour cream, seasonings, hash browns, and 1 cup of cheese.
  3. Cook in Slow Cooker: Transfer mixture to a greased slow cooker. Cook on low for 5-6 hours or high for 2-3 hours.
  4. Top with Cheese: Sprinkle remaining cheese over the top in the last 15 minutes of cooking. Serve warm.

Notes

  • You can use ground turkey or sausage instead of beef.
  • For extra heat, add jalapeños, or top with crushed tortilla chips for crunch.
