Ingredients
Main Ingredients:
- 1 pound ground beef
- 1 small onion, chopped
- 3 cloves garlic, minced
Additional Ingredients:
- 1 can (15 ounces) kidney beans, drained and rinsed
- 1 can (15 ounces) corn, drained
- 1 can (10.5 ounces) condensed cream of mushroom soup
- 1/2 cup sour cream
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon smoked paprika
- 1/2 teaspoon chili powder
- 2 cups frozen diced hash brown potatoes
- 1 1/2 cups shredded cheddar cheese, divided
Instructions
- Brown the Beef: In a skillet over medium heat, brown the ground beef with the onion and garlic until fully cooked. Drain excess fat.
- Mix Ingredients: In a large bowl, combine the beef mixture, beans, corn, soup, sour cream, seasonings, hash browns, and 1 cup of cheese.
- Cook in Slow Cooker: Transfer mixture to a greased slow cooker. Cook on low for 5-6 hours or high for 2-3 hours.
- Top with Cheese: Sprinkle remaining cheese over the top in the last 15 minutes of cooking. Serve warm.
Notes
- You can use ground turkey or sausage instead of beef.
