Description

Indulge in the rich and savory flavors of Filipino cuisine with this Slow Cooker Chicken Adobo recipe. Tender, juicy chicken thighs simmered in a tangy and slightly sweet sauce made with soy sauce, apple cider vinegar, and aromatic spices. Perfect for a comforting family meal!

Ingredients

For the Chicken:

  • 2 1/2 pounds bone-in, skin-on chicken thighs
  • 1/2 cup soy sauce
  • 1/2 cup apple cider vinegar
  • 1/4 cup water
  • 6 cloves garlic (smashed)
  • 2 bay leaves
  • 1 teaspoon whole black peppercorns
  • 1 tablespoon brown sugar

For Cooking:

  • 1 small onion (thinly sliced)
  • 1 tablespoon cooking oil

For Garnish:

  • Chopped green onions or parsley (optional)

Instructions

  1. Prepare the Chicken: Sear the chicken thighs in a skillet until browned, then transfer to the slow cooker.
  2. Mix the Sauce: Whisk together soy sauce, vinegar, water, sugar, garlic, bay leaves, peppercorns, and onion. Pour over the chicken.
  3. Cook: Cover and cook on low for 6–7 hours or on high for 3–4 hours until tender.
  4. Thicken the Sauce: Simmer the cooking liquid for a thicker sauce. Serve the chicken over rice with sauce on top. Garnish with green onions or parsley.

Notes

  • You can use boneless chicken thighs or drumsticks.
  • Adjust vinegar or sugar according to your taste preferences.
  • Leftovers taste even better the next day!
