Ingredients

Ingredients:

  • 6 bone-in, skin-on chicken thighs
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon dried thyme
  • 1/4 cup chicken broth or white wine (optional, for deglazing)
  • fresh parsley for garnish (optional)

Instructions

  1. Pat the chicken thighs dry: Use paper towels to pat the chicken thighs dry.
  2. Mix seasoning: In a small bowl, mix together salt, pepper, garlic powder, smoked paprika, onion powder, and thyme. Rub the seasoning over the chicken.
  3. Sear chicken: Heat olive oil in a skillet over medium-high heat. Place chicken thighs skin-side down and sear for 6–7 minutes until crispy. Flip and cook for another 10–12 minutes.
  4. Deglaze (optional): Add chicken broth or wine to the skillet and simmer for 2–3 minutes.
  5. Rest and serve: Let the chicken rest before serving. Garnish with parsley if desired.

Notes

  • For extra crispiness, finish the chicken under the broiler for 2–3 minutes.
  • Serve with roasted vegetables, mashed potatoes, or over a salad for a complete meal.
