Ingredients
Dry Ingredients:
- 1 ¾ cups all-purpose flour
- 1 cup granulated sugar
- ½ cup packed brown sugar
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- 1 ½ teaspoons ground cinnamon
- ½ teaspoon ground nutmeg
- ¼ teaspoon ground cloves
- ¼ teaspoon ground ginger
Wet Ingredients:
- 2 large eggs
- 1 cup canned pumpkin puree
- ½ cup vegetable oil
- ¼ cup milk
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and prepare a muffin tin with liners or grease.
- Mix dry ingredients: In a large bowl, combine flour, sugars, baking soda, baking powder, salt, and spices.
- Combine wet ingredients: In another bowl, beat eggs and mix in pumpkin, oil, milk, and vanilla.
- Combine wet and dry: Gradually add wet mixture to dry ingredients, stirring until just combined.
- Bake: Fill muffin cups and bake for 20–22 minutes until a toothpick comes out clean.
- Cool and enjoy: Let muffins cool before serving.
Notes
- You can add ½ cup of chopped walnuts or chocolate chips for extra flavor.
