Ingredients
For the soup:
- 4 large yellow onions, thinly sliced
- 3 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon sugar
- 1/2 teaspoon black pepper
- 1/4 cup dry white wine (optional)
- 6 cups beef broth (low-sodium preferred)
- 2 teaspoons Worcestershire sauce
- 1 bay leaf
- 1 teaspoon fresh thyme leaves or 1/2 teaspoon dried thyme
For serving:
- 1 baguette, sliced
- 1 1/2 cups grated Gruyère cheese
Instructions
- Caramelize the onions: In a large pot, melt the butter with olive oil. Add onions and cook until softened. Sprinkle salt, sugar, and pepper. Cook until caramelized.
- Prepare the soup: Deglaze with white wine, if using. Add beef broth, Worcestershire sauce, bay leaf, and thyme. Simmer for 20–25 minutes.
- Broil the cheese topping: Toast baguette slices. Ladle soup into bowls, top with baguette and Gruyère. Broil until cheese is melted and bubbly.
Notes
- For a vegetarian version, use vegetable broth and omit Worcestershire sauce.
- You can make the caramelized onions ahead of time and refrigerate or freeze them for later use.
