Description

Ingredients

For the soup:

  • 4 large yellow onions, thinly sliced
  • 3 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon sugar
  • 1/2 teaspoon black pepper
  • 1/4 cup dry white wine (optional)
  • 6 cups beef broth (low-sodium preferred)
  • 2 teaspoons Worcestershire sauce
  • 1 bay leaf
  • 1 teaspoon fresh thyme leaves or 1/2 teaspoon dried thyme

For serving:

  • 1 baguette, sliced
  • 1 1/2 cups grated Gruyère cheese

Instructions

  1. Caramelize the onions: In a large pot, melt the butter with olive oil. Add onions and cook until softened. Sprinkle salt, sugar, and pepper. Cook until caramelized.
  2. Prepare the soup: Deglaze with white wine, if using. Add beef broth, Worcestershire sauce, bay leaf, and thyme. Simmer for 20–25 minutes.
  3. Broil the cheese topping: Toast baguette slices. Ladle soup into bowls, top with baguette and Gruyère. Broil until cheese is melted and bubbly.

Notes

  • For a vegetarian version, use vegetable broth and omit Worcestershire sauce.
  • You can make the caramelized onions ahead of time and refrigerate or freeze them for later use.
