Instructions

  3. Prepare the filling: In a blender or food processor, combine the cottage cheese, Greek yogurt, egg, sugar, flour, vanilla extract, and lemon zest. Blend until the mixture is smooth and creamy with no visible curds.
  4. Assemble the cheesecake: Pour the smooth filling over the prepared crust, spreading evenly with a spatula.
  5. Bake the cheesecake: Place the cheesecake in the preheated oven and bake for 35 to 40 minutes, or until the edges are set and the center is slightly jiggly but not liquid.
