Ingredients
Shrimp Mixture
- 1 ounce pork fat (optional)
- ½ pound shrimp, peeled and deveined
- ¼ cup chopped cilantro
- 2 scallions, finely chopped
- 1 teaspoon grated ginger
- ¼ teaspoon sesame oil
- ½ teaspoon sugar
- ½ teaspoon salt
- 2 teaspoons cornstarch
- 1 egg white
Other Ingredients
- 4 slices white sandwich bread
- 2 tablespoons toasted sesame seeds
- Vegetable oil for frying
Instructions
- Prepare shrimp mixture: If using pork fat, add it to a food processor and blend until smooth. Add shrimp, cilantro, scallions, ginger, sesame oil, sugar, salt, cornstarch, and egg white. Pulse until you achieve a smooth paste.
- Assemble toasts: Evenly spread the shrimp mixture over 4 slices of sandwich bread, reaching the edges. Sprinkle toasted sesame seeds over the mixture and gently press them in to adhere. Cut each slice diagonally into four triangles.
- Heat oil for frying: Pour about ⅛ inch of vegetable oil into a large nonstick or cast iron skillet. Heat the oil over medium heat until it shimmers and is hot enough for frying.
- Fry shrimp toast: Carefully place the triangles shrimp-side down in the hot oil. Fry for 2-3 minutes or until the shrimp side turns golden and crispy.
- Flip and fry other side: Using a spatula, carefully turn the triangles over and fry the bread side for about 1 minute or until it is golden brown and crisp.
- Drain and serve: Transfer the fried shrimp toast to paper towels to drain excess oil. Serve immediately for the best texture and flavor.
