Ingredients

Shrimp and Noodles

  • 1 pound (about 450g) peeled and deveined shrimp
  • 8 ounces (225g) rice noodles or egg noodles

Vegetables

  • 1 cup sliced bell peppers (any color)
  • 1 cup broccoli florets
  • 2 stalks green onions, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced

Sauce and Seasonings

  • 3 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 1/4 teaspoon chili flakes (optional, or to taste)
  • Salt and pepper (to season shrimp)


Instructions

  1. Prepare the Ingredients: Peel and devein the shrimp if not already done. Chop the bell peppers, broccoli, and green onions. Mince the garlic and ginger. Cook the noodles according to package instructions, then rinse them with cold water to stop the cooking process and prevent sticking.
  2. Cook the Shrimp: Heat 1 tablespoon of sesame oil in a large skillet or wok over medium-high heat. Lightly season the shrimp with salt and pepper. Cook the shrimp for about 2 minutes per side until they turn pink and opaque. Remove the shrimp from the pan and set aside.
  3. Sauté the Vegetables: In the same pan, add more sesame oil if needed. Add the minced garlic and ginger and cook until fragrant, about 30 seconds. Add the broccoli florets and sliced bell peppers and stir-fry for 4-5 minutes until they are tender-crisp but still vibrant.
  4. Combine Noodles and Sauce: Return the cooked shrimp to the skillet with the vegetables. Add the cooked noodles and pour in the soy sauce. Toss everything together to evenly coat the ingredients in the sauce. Cook for another 2 minutes until heated through and well combined.
  5. Garnish and Serve: Turn off the heat and sprinkle the sliced green onions and optional chili flakes over the stir fry. Serve hot immediately for the best flavor and texture.
