Description

This Shrimp Scampi Pasta Bake combines the classic flavors of garlic, butter, lemon, and succulent shrimp with creamy cheese and pasta, all baked to perfection for a comforting and elegant meal that’s perfect for weeknight dinners or special occasions.

Ingredients

Pasta

  • 12 oz (340 g) linguine or spaghetti

Shrimp Scampi Sauce

  • 1 lb (450 g) large shrimp, peeled and deveined
  • 4 tbsp butter
  • 4 cloves garlic, minced
  • 1/4 tsp red pepper flakes
  • 1/2 cup white wine or chicken broth
  • 1 lemon, juiced and zested
  • 1 cup heavy cream
  • Salt and freshly ground black pepper, to taste

Cheese and Garnish

  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Preheat Oven and Prepare Dish: Preheat your oven to 375°F (190°C) and lightly grease a large baking dish to prevent sticking.
  2. Cook Pasta: Boil the linguine or spaghetti until al dente according to the package instructions. Drain thoroughly and set aside.
  3. Make Garlic Butter Base: In a skillet, melt the butter over medium heat. Add the minced garlic and red pepper flakes, cooking just until fragrant, about 1 minute, careful not to burn the garlic.
  4. Cook Shrimp: Add the peeled and deveined shrimp to the skillet. Cook until they turn pink and opaque, about 2-3 minutes per side. Remove shrimp from the skillet and set aside.
  5. Deglaze and Simmer Sauce: Pour the white wine or chicken broth into the skillet, scraping the bottom to loosen any browned bits. Let it simmer for 2-3 minutes.
  6. Add Lemon and Cream: Stir in the lemon juice, lemon zest, and heavy cream. Continue to simmer gently until the sauce thickens slightly, about 4-5 minutes.
  7. Toss Pasta in Sauce: Combine the cooked pasta with the creamy sauce, tossing well to coat evenly. Season with salt and freshly ground black pepper to taste.
  8. Assemble in Baking Dish: Transfer the sauced pasta into the prepared baking dish. Arrange the cooked shrimp on top evenly. Sprinkle the grated Parmesan and shredded mozzarella cheeses over the pasta.
  9. Bake: Place the dish in the preheated oven and bake for 15 to 20 minutes, or until the cheese is melted, bubbly, and beginning to turn golden.
  10. Garnish and Serve: Remove from oven, garnish with freshly chopped parsley, and serve hot for a delicious, hearty meal.

Notes

  • Use fresh shrimp for the best flavor and texture.
  • If you prefer a spicier dish, increase red pepper flakes to taste.
  • White wine adds depth, but chicken broth works well for a non-alcoholic version.
  • Make sure to not overcook the shrimp to keep them juicy and tender.
  • This dish can be prepared ahead and baked just before serving.
