Description

These Shrimp Fajitas are a delicious and easy-to-make Mexican-inspired dish perfect for a weeknight dinner. Juicy shrimp are marinated in a flavorful blend of spices, then sautéed with colorful bell peppers and onions. Serve the shrimp mixture wrapped in warm tortillas with your favorite toppings for a satisfying meal.


Ingredients

Shrimp Fajitas:

  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow onion, sliced
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • juice of 1 lime
  • 8 small flour or corn tortillas

Optional Toppings:

  • sour cream
  • avocado
  • cilantro
  • lime wedges

Instructions

  1. Marinate the Shrimp: In a large bowl, toss the shrimp with 1/2 tablespoon olive oil, chili powder, cumin, paprika, garlic powder, cayenne pepper, salt, and black pepper. Marinate for 10 minutes.
  2. Sauté Vegetables: Heat remaining olive oil in a skillet. Sauté bell peppers and onion for 5-6 minutes until slightly softened.
  3. Cook Shrimp: Cook marinated shrimp in the skillet for 2-3 minutes per side until pink.
  4. Combine: Return vegetables to the skillet with shrimp, squeeze lime juice over the top, stir to combine, and heat through for 1 minute.
  5. Serve: Warm tortillas and serve shrimp mixture with optional toppings.

Notes

  • You can substitute chicken or steak for shrimp if desired.
  • For a low-carb version, serve over lettuce or cauliflower rice.
