Ingredients
Shrimp Fajitas:
- 1 pound large shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow onion, sliced
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper (optional)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- juice of 1 lime
- 8 small flour or corn tortillas
Optional Toppings:
- sour cream
- avocado
- cilantro
- lime wedges
Instructions
- Marinate the Shrimp: In a large bowl, toss the shrimp with 1/2 tablespoon olive oil, chili powder, cumin, paprika, garlic powder, cayenne pepper, salt, and black pepper. Marinate for 10 minutes.
- Sauté Vegetables: Heat remaining olive oil in a skillet. Sauté bell peppers and onion for 5-6 minutes until slightly softened.
- Cook Shrimp: Cook marinated shrimp in the skillet for 2-3 minutes per side until pink.
- Combine: Return vegetables to the skillet with shrimp, squeeze lime juice over the top, stir to combine, and heat through for 1 minute.
- Serve: Warm tortillas and serve shrimp mixture with optional toppings.
Notes
- You can substitute chicken or steak for shrimp if desired.
