Description

A bold and hearty one-pan Creole-inspired dish featuring juicy shrimp, savory ground meat, and perfectly seasoned rice with vegetables and spices.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1/2 lb ground pork or beef (or turkey)
  • 3 cups cooked rice (preferably day-old)
  • 1 bell pepper, diced (green preferred)
  • 2 stalks celery, diced
  • 1 yellow onion, diced
  • 3 cloves garlic, minced
  • 1-2 tbsp Cajun seasoning (adjust to taste)
  • 1 tbsp Worcestershire sauce
  • 1/4 cup chicken broth
  • 2 green onions, sliced
  • 2 tbsp fresh parsley, chopped
  • 1-2 tbsp vegetable oil (for sautéing)


Instructions

  1. Heat oil in a large skillet over medium heat. Sauté diced onions, bell peppers, and celery until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  2. Push the vegetables to one side of the skillet and add the ground meat. Cook until browned, breaking it up with a spoon. Mix it with the sautéed vegetables.
  3. Add Cajun seasoning and Worcestershire sauce. Stir everything to coat well.
  4. Add the cooked rice and a splash of chicken broth. Stir to combine and heat through.
  5. Nestle shrimp into the rice mixture. Cook for 3-4 minutes or until shrimp are pink and opaque. Do not overcook.
  6. Stir in green onions and parsley. Adjust seasoning to taste. Serve hot.

Notes

  • Use leftover rice for best texture and to prevent mushiness.
  • You can swap shrimp with andouille sausage, chicken, or tofu for variety.
  • Add peas, corn, or diced tomatoes for extra veggies.
  • To spice it up, add jalapeño or hot sauce.
