Ingredients
Shrimp
- 1 lb shrimp, peeled and deveined
- Salt and pepper, to taste
- Pinch of paprika
- Olive oil, for cooking
Creamed Corn
- 4 cups fresh or frozen corn kernels
- 1/2 cup heavy cream
- 1/4 cup whole milk
- 2 tbsp unsalted butter
- 1 tbsp olive oil
- 1/2 onion, finely chopped
- 2 cloves garlic, minced
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper (optional, for heat)
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Sauté Onion and Garlic: Heat the olive oil and butter in a large skillet over medium heat. Once melted, add the chopped onion and cook for 3-4 minutes until softened. Add the minced garlic and cook for an additional 30 seconds until fragrant.
- Cook Corn: Add the corn kernels to the skillet and cook for about 5 minutes, stirring occasionally to combine flavors and allow the corn to soften.
- Add Cream and Seasonings: Pour in the heavy cream and whole milk. Stir in the paprika, cayenne pepper if using, and salt and pepper to taste. Bring the mixture to a simmer and let it cook for 3-4 minutes until the cream slightly thickens.
- Cook Shrimp: Meanwhile, heat another skillet over medium-high heat. Add a little olive oil, then cook the shrimp for 2-3 minutes per side or until they turn pink and opaque. Season them with salt, pepper, and a pinch of paprika during cooking.
- Combine Shrimp and Creamed Corn: Once cooked, add the shrimp to the creamed corn mixture and stir well to combine all the flavors.
- Simmer Together: Continue to cook for another 2-3 minutes to ensure everything is heated through and the flavors meld beautifully.
- Garnish and Serve: Remove from heat and garnish with freshly chopped parsley. Serve warm as a main dish alongside rice, cornbread, or a light salad, or enjoy it as a hearty side dish.
Notes
- For a spicier dish, increase the cayenne pepper or add a dash of hot sauce.
- Fresh corn is preferred for the best flavor, but frozen corn works well too.
- You can substitute the shrimp with scallops or chunks of chicken if desired.
- Use full-fat dairy products for the creamiest texture; low-fat versions may alter the richness.
- Ensure shrimp are cooked just until opaque to avoid toughness.
- This dish pairs perfectly with buttery cornbread or steamed rice for a complete meal.
