Ingredients
For the Meat Filling:
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 carrots, peeled and diced
- 2 cloves garlic, minced
- 1 1/2 pounds ground lamb or beef
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup frozen peas
- 1/2 cup beef broth
For the Mashed Potato Topping:
- 4 cups mashed potatoes, prepared and warm
- 2 tablespoons butter, melted
For Garnish (optional):
- Chopped fresh parsley
Instructions
- Preheat the oven: Preheat oven to 400°F (200°C).
- Sauté vegetables: In a skillet, heat olive oil and sauté onion and carrots until softened. Add garlic.
- Cook the meat: Add ground lamb, cook until browned. Stir in tomato paste, Worcestershire sauce, thyme, salt, and pepper.
- Add peas and broth: Mix in peas and beef broth, simmer until thickened.
- Assemble: Transfer meat mixture to a baking dish, top with mashed potatoes, brush with butter.
- Bake: Bake for 20–25 minutes until golden and bubbly.
- Rest and serve: Let it rest before serving. Garnish with parsley if desired.
Notes
- For a lighter version, use ground turkey and sweet potato mash.
- You can also add corn or green beans for extra veggies.
