Description

Ingredients

Wet Ingredients

  • 2 cups warm water (110°F)
  • 1 tablespoon honey or maple syrup
  • 2 tablespoons olive oil

Dry Ingredients

  • 2¼ teaspoons active dry yeast
  • 2 cups old-fashioned rolled oats
  • 3 cups bread flour
  • 1 cup whole wheat flour
  • ¼ cup sunflower seeds
  • 2 tablespoons flaxseeds
  • 2 tablespoons sesame seeds
  • 1½ teaspoons salt

Instructions

  1. Activate the yeast: In a large mixing bowl, combine the warm water, yeast, and honey. Stir and let sit for 5–10 minutes until the mixture becomes foamy, indicating the yeast is active.
  2. Mix dry ingredients: Add the oats, bread flour, whole wheat flour, sunflower seeds, flaxseeds, sesame seeds, and salt to the yeast mixture. Stir until a shaggy dough forms.
  3. Knead the dough: Add the olive oil and knead the dough by hand or using a stand mixer fitted with a dough hook for 8–10 minutes until smooth and elastic. If sticky, incorporate more flour gradually, one tablespoon at a time.
  4. First rise: Place the dough in a lightly oiled bowl, cover it, and let it rise in a warm spot for 1 to 1½ hours, or until doubled in size.
  5. Shape the loaf: Punch down the risen dough, shape it into a loaf, and transfer it into a greased 9×5-inch loaf pan. Cover and let it rise again for 30–45 minutes until puffy.
  6. Preheat oven and prepare for baking: Preheat your oven to 375°F. Brush the top of the loaf with water or milk, then sprinkle with additional oats and seeds if desired.
  7. Bake the bread: Bake in the oven for 35–40 minutes or until the loaf is golden brown and sounds hollow when tapped.
  8. Cool the loaf: Let the bread cool in the pan for 10 minutes, then remove it to a wire rack to cool completely before slicing for best texture and flavor.
