- 2 tablespoons olive oil
Dry Ingredients
- 2¼ teaspoons active dry yeast
- 2 cups old-fashioned rolled oats
- 3 cups bread flour
- 1 cup whole wheat flour
- ¼ cup sunflower seeds
- 2 tablespoons flaxseeds
- 2 tablespoons sesame seeds
- 1½ teaspoons salt

Instructions
- Activate the yeast: In a large mixing bowl, combine the warm water, yeast, and honey. Stir and let sit for 5–10 minutes until the mixture becomes foamy, indicating the yeast is active.
- Mix dry ingredients: Add the oats, bread flour, whole wheat flour, sunflower seeds, flaxseeds, sesame seeds, and salt to the yeast mixture. Stir until a shaggy dough forms.
- Knead the dough: Add the olive oil and knead the dough by hand or using a stand mixer fitted with a dough hook for 8–10 minutes until smooth and elastic. If sticky, incorporate more flour gradually, one tablespoon at a time.
- First rise: Place the dough in a lightly oiled bowl, cover it, and let it rise in a warm spot for 1 to 1½ hours, or until doubled in size.
- Shape the loaf: Punch down the risen dough, shape it into a loaf, and transfer it into a greased 9×5-inch loaf pan. Cover and let it rise again for 30–45 minutes until puffy.
- Preheat oven and prepare for baking: Preheat your oven to 375°F. Brush the top of the loaf with water or milk, then sprinkle with additional oats and seeds if desired.
- Bake the bread: Bake in the oven for 35–40 minutes or until the loaf is golden brown and sounds hollow when tapped.
- Cool the loaf: Let the bread cool in the pan for 10 minutes, then remove it to a wire rack to cool completely before slicing for best texture and flavor.
