Description

Delicately seared scallops with a golden crust, served with a touch of lemon and herbs for a gourmet seafood dish that’s simple yet elegant.


Ingredients

  • 1 lb sea scallops
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • Salt, to taste
  • Black pepper, to taste
  • 1 clove garlic, minced
  • 1 tbsp fresh lemon juice
  • 1 tbsp chopped fresh parsley (optional)

Instructions

  1. Pat the scallops dry with paper towels to ensure a good sear.
  2. Season both sides with salt and pepper.
  3. Heat olive oil in a large skillet over medium-high heat until shimmering.
  4. Add the scallops to the pan, spacing them evenly without crowding.
  5. Sear for about 2-3 minutes on one side without moving them, until a golden crust forms.
  6. Flip the scallops and add butter and minced garlic to the pan.
  7. Sear the second side for another 1-2 minutes, spooning the melted butter and garlic over the scallops as they cook.
  8. Remove from heat and drizzle with lemon juice.
  9. Garnish with chopped parsley if desired and serve immediately.

Notes

  • Make sure scallops are dry for the best sear.
  • Do not overcook scallops; they should be opaque and slightly springy.
  • You can substitute ghee for butter for a higher smoke point.
