Description

Spinach Filling:

  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 4 cups fresh spinach, chopped
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1/2 teaspoon dried dill
  • 1/2 teaspoon dried oregano
  • 1/2 cup crumbled feta cheese
  • 1/4 cup grated Parmesan cheese
  • 1 egg, beaten (for egg wash)


Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Sauté onions and garlic: In a large skillet over medium heat, sauté the onion in olive oil until soft. Add garlic and cook briefly.
  3. Add spinach and seasonings: Stir in spinach and cook until wilted. Season with salt, pepper, red pepper flakes, dill, and oregano.
  4. Prepare the filling: Let the mixture cool slightly, then stir in feta and Parmesan cheeses.
  5. Assemble pastries: Roll out puff pastry, cut into squares, spoon spinach mixture onto each square, fold, and seal edges.
