Spinach Filling:
- 1 small onion, finely chopped
 - 2 garlic cloves, minced
 - 4 cups fresh spinach, chopped
 - 1/4 teaspoon salt
 - 1/4 teaspoon black pepper
 - 1/4 teaspoon crushed red pepper flakes (optional)
 - 1/2 teaspoon dried dill
 - 1/2 teaspoon dried oregano
 - 1/2 cup crumbled feta cheese
 - 1/4 cup grated Parmesan cheese
 - 1 egg, beaten (for egg wash)
 
Instructions
- Preheat the oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
 - Sauté onions and garlic: In a large skillet over medium heat, sauté the onion in olive oil until soft. Add garlic and cook briefly.
 - Add spinach and seasonings: Stir in spinach and cook until wilted. Season with salt, pepper, red pepper flakes, dill, and oregano.
 - Prepare the filling: Let the mixture cool slightly, then stir in feta and Parmesan cheeses.
 - Assemble pastries: Roll out puff pastry, cut into squares, spoon spinach mixture onto each square, fold, and seal edges.
 - Bake: Brush pastries with egg wash, bake for 18–20 minutes until golden and puffed.
 - Serve: Let cool slightly before serving.

- You can substitute frozen spinach (thawed and well-drained) for fresh spinach.
