Description

These savory spinach and feta puff pastry bites are a delightful appetizer featuring a flavorful combination of spinach, onions, garlic, and feta cheese encased in flaky puff pastry. Perfect for entertaining or as a tasty snack.


Ingredients

Puff Pastry:

  • 1 sheet frozen puff pastry, thawed

Spinach Filling:

  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups fresh spinach, chopped (or 1 cup frozen, thawed and drained)
  • ½ teaspoon dried oregano
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup crumbled feta cheese

Additional:

  • 1 egg, beaten (for egg wash)
  • Sesame seeds or poppy seeds for garnish (optional)

Instructions

  1. Preheat the Oven: Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Sauté Onion and Garlic: In a skillet over medium heat, sauté the onion in olive oil until soft. Add garlic and cook for 30 seconds.
  3. Add Spinach and Feta: Stir in spinach, oregano, salt, and pepper. Cook until wilted. Remove from heat, let cool slightly, then mix in feta.
  4. Prepare Puff Pastry: Roll out puff pastry, cut into squares, spoon spinach-feta mixture onto each square, fold corners or leave open-faced.
  5. Bake: Brush with beaten egg, sprinkle with seeds if desired, and bake for 15–18 minutes until golden.
  6. Serve: Serve warm or at room temperature.

Notes

  • These bites can be made ahead and baked just before serving.
  • Add a pinch of red pepper flakes for a touch of heat.
