Description

Ingredients

Olive Oil:

2 tablespoons

  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 2 medium zucchinis, sliced into half-moons
  • 1 cup sliced mushrooms (white or cremini)
  • 1 cup cherry tomatoes, halved
  • 1/2 teaspoon dried Italian seasoning
  • Salt and black pepper to taste
  • Fresh parsley for garnish (optional)


Instructions

  1. Heat the olive oil: In a large skillet over medium heat.
  2. Add the chopped onion and sauté for 2 to 3 minutes until softened.

  3. Stir in the garlic: Cook for 30 seconds until fragrant.
  4. Add zucchini and mushrooms: Season with salt, pepper, and Italian seasoning, and cook for 6 to 8 minutes until tender.
  5. Include cherry tomatoes: Cook for another 2 to 3 minutes until softened.
