Ingredients
Olive Oil:

- 2 garlic cloves, minced
- 2 medium zucchinis, sliced into half-moons
- 1 cup sliced mushrooms (white or cremini)
- 1 cup cherry tomatoes, halved
- 1/2 teaspoon dried Italian seasoning
- Salt and black pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Heat the olive oil: In a large skillet over medium heat.
- Stir in the garlic: Cook for 30 seconds until fragrant.
- Add zucchini and mushrooms: Season with salt, pepper, and Italian seasoning, and cook for 6 to 8 minutes until tender.
- Include cherry tomatoes: Cook for another 2 to 3 minutes until softened.
- Taste and adjust seasoning: Garnish with parsley and serve warm.
Add the chopped onion and sauté for 2 to 3 minutes until softened.
