Description

A classic and hearty Sausage, Peppers, and Onions recipe perfect for a quick and flavorful sandwich. Italian sausage is browned and combined with sautéed colorful bell peppers, onions, and fragrant herbs, served on toasted hoagie rolls for an easy meal that satisfies.


Ingredients

Sausage

  • 1 pound Italian sausage links

Vegetables

  • 3 medium bell peppers (different colors), sliced
  • 1 large onion, sliced
  • 3 cloves garlic, minced

Other

  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and black pepper, to taste
  • 4 hoagie rolls, split lengthwise


Instructions

  1. Cook Sausage: Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the Italian sausage links and cook, turning occasionally, until browned on all sides and cooked through, about 8-10 minutes. Remove the sausages from the skillet and slice them if preferred.
  2. Sauté Vegetables: Add the remaining 1 tablespoon of olive oil to the same skillet. Add the sliced bell peppers and onions, cooking over medium heat until they start to soften, approximately 5 minutes.
  3. Add Spices and Sausages: Stir in minced garlic, dried oregano, dried basil, salt, and black pepper. Cook for about 1 minute until fragrant. Return the sliced or whole sausages to the skillet and continue cooking until the sausages are fully cooked and the vegetables are tender, around 5 more minutes.
  4. Assemble Sandwiches: Optionally toast the hoagie rolls. Fill each roll generously with the sausage and pepper-onion mixture. Serve warm.
