Description

These hearty Sausage Breakfast Burritos combine savory sausage, fluffy scrambled eggs, melty cheese, and golden potatoes, all wrapped up in a warm tortilla. Perfect for meal prep or busy mornings, they’re filling, flavorful, and easily customizable to your taste.

Ingredients

Units Scale

Sausage and Potato Filling

  • 1/2 pound breakfast sausage (pork or turkey)
  • 1 cup frozen diced potatoes (or hashbrowns)
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Egg Mixture

  • 6 large eggs
  • 2 tablespoons milk
  • 1 tablespoon butter
  • Salt and pepper, to taste

Assembly

  • 4 large flour tortillas
  • 1 cup shredded cheddar cheese
  • Salsa (optional)
  • Fresh cilantro, chopped (optional)

Instructions

  1. Cook the Sausage: In a large skillet over medium heat, cook the breakfast sausage, breaking it up with a spoon, until browned and fully cooked. Transfer the sausage to a plate lined with paper towels to drain excess grease.
  2. Saute the Potatoes: In the same skillet, add olive oil and the frozen diced potatoes. Cook for 8-10 minutes, stirring occasionally, until the potatoes are golden brown and crispy. Season with salt and pepper. Return the cooked sausage to the skillet and toss to combine. Remove from heat.
  3. Scramble the Eggs: In a bowl, whisk together the eggs, milk, and a pinch of salt and pepper. Heat butter in a nonstick skillet over medium-low heat, then pour in the egg mixture. Gently stir with a spatula and cook until the eggs are just set and fluffy. Remove from heat.
  4. Assemble the Burritos: Warm the tortillas in the microwave for about 20 seconds to make them pliable. Lay each tortilla flat and divide the sausage-potato mixture, scrambled eggs, and shredded cheddar cheese evenly among them. Add salsa and cilantro if using.
  5. Fold and Crisp the Burritos: Fold in the sides of the tortilla and roll up tightly into a burrito. Optional: Place seam side down in a dry skillet over medium heat for 2-3 minutes on each side, until golden and crisp.

Notes

  • For easy meal prep, wrap individual burritos in foil and refrigerate for up to 3 days or freeze for up to 2 months.
  • Use your favorite breakfast sausage (pork, turkey, or chicken) or try a plant-based alternative for a vegetarian version.
  • Customize with veggies like sautéed peppers, onions, or spinach.
  • Cheese options like Monterey Jack or pepper jack work well too.
