Sausage and Potato Filling
- 1/2 pound breakfast sausage (pork or turkey)
- 1 cup frozen diced potatoes (or hashbrowns)
- 1 tablespoon olive oil
- Salt and pepper to taste
Egg Mixture
- 6 large eggs
- 2 tablespoons milk
- 1 tablespoon butter
- Salt and pepper, to taste
Assembly
- 4 large flour tortillas
- 1 cup shredded cheddar cheese
- Salsa (optional)
- Fresh cilantro, chopped (optional)
Instructions
- Cook the Sausage: In a large skillet over medium heat, cook the breakfast sausage, breaking it up with a spoon, until browned and fully cooked. Transfer the sausage to a plate lined with paper towels to drain excess grease.
- Saute the Potatoes: In the same skillet, add olive oil and the frozen diced potatoes. Cook for 8-10 minutes, stirring occasionally, until the potatoes are golden brown and crispy. Season with salt and pepper. Return the cooked sausage to the skillet and toss to combine. Remove from heat.
- Scramble the Eggs: In a bowl, whisk together the eggs, milk, and a pinch of salt and pepper. Heat butter in a nonstick skillet over medium-low heat, then pour in the egg mixture. Gently stir with a spatula and cook until the eggs are just set and fluffy. Remove from heat.
- Assemble the Burritos: Warm the tortillas in the microwave for about 20 seconds to make them pliable. Lay each tortilla flat and divide the sausage-potato mixture, scrambled eggs, and shredded cheddar cheese evenly among them. Add salsa and cilantro if using.
- Fold and Crisp the Burritos: Fold in the sides of the tortilla and roll up tightly into a burrito. Optional: Place seam side down in a dry skillet over medium heat for 2-3 minutes on each side, until golden and crisp.
Notes
- For easy meal prep, wrap individual burritos in foil and refrigerate for up to 3 days or freeze for up to 2 months.
- Use your favorite breakfast sausage (pork, turkey, or chicken) or try a plant-based alternative for a vegetarian version.
- Customize with veggies like sautéed peppers, onions, or spinach.
- Cheese options like Monterey Jack or pepper jack work well too.
