Description

This vibrant and flavorful Satay Crispy Rice Salad is a delicious Asian-inspired dish that combines crispy jasmine rice with shredded chicken or tofu, colorful vegetables, and a creamy peanut satay dressing.


Ingredients

Jasmine Rice:

  • 2 cups cooked jasmine rice (preferably chilled)
  • 2 tbsp vegetable oil
  • 1/2 tsp salt

Salad Ingredients:

  • 1 cup shredded rotisserie chicken or cooked tofu
  • 1 cup shredded red cabbage
  • 1/2 cup shredded carrots
  • 1/2 cup sliced cucumber
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped roasted peanuts
  • 2 tbsp green onions (sliced)

Satay Dressing:

  • 3 tbsp creamy peanut butter
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp lime juice
  • 1 tbsp honey or maple syrup
  • 1 tsp sesame oil
  • 1 tsp grated fresh ginger
  • 12 tbsp warm water (to thin as needed)


Instructions

  1. Crisp the Rice: Heat 1 tablespoon of vegetable oil in a nonstick skillet. Add cooked rice in a thin, even layer. Let cook undisturbed until crispy. Transfer to a mixing bowl.
  2. Prepare Satay Dressing: Whisk together all dressing ingredients until smooth.
  3. Combine Ingredients: Add chicken/tofu, cabbage, carrots, cucumber, cilantro, and green onions to the rice. Pour dressing over the salad and toss gently.
  4. Serve: Top with peanuts and enjoy immediately.

Notes

  • For a vegetarian version, use tofu or tempeh.
  • Add sliced red chilies or sriracha for heat.
  • Best enjoyed fresh for maximum crunch.
