Description
This vibrant and flavorful Satay Crispy Rice Salad is a delicious Asian-inspired dish that combines crispy jasmine rice with shredded chicken or tofu, colorful vegetables, and a creamy peanut satay dressing.
Ingredients
Jasmine Rice:
- 2 cups cooked jasmine rice (preferably chilled)
- 2 tbsp vegetable oil
- 1/2 tsp salt
Salad Ingredients:
- 1 cup shredded rotisserie chicken or cooked tofu
- 1 cup shredded red cabbage
- 1/2 cup shredded carrots
- 1/2 cup sliced cucumber
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped roasted peanuts
- 2 tbsp green onions (sliced)
Satay Dressing:
- 3 tbsp creamy peanut butter
- 1 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp lime juice
- 1 tbsp honey or maple syrup
- 1 tsp sesame oil
- 1 tsp grated fresh ginger
- 1–2 tbsp warm water (to thin as needed)
Instructions
- Crisp the Rice: Heat 1 tablespoon of vegetable oil in a nonstick skillet. Add cooked rice in a thin, even layer. Let cook undisturbed until crispy. Transfer to a mixing bowl.
- Prepare Satay Dressing: Whisk together all dressing ingredients until smooth.
- Combine Ingredients: Add chicken/tofu, cabbage, carrots, cucumber, cilantro, and green onions to the rice. Pour dressing over the salad and toss gently.
- Serve: Top with peanuts and enjoy immediately.
Notes
- For a vegetarian version, use tofu or tempeh.
- Add sliced red chilies or sriracha for heat.
- Best enjoyed fresh for maximum crunch.
