Ingredients
Dough:
- 1 cup unsalted butter (softened)
- 1 cup brown sugar (packed)
- 1/2 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups semi-sweet chocolate chips
Filling:
- 10–12 Samoa cookies (cut in half)
- 1/2 cup shredded sweetened coconut (toasted)
- 1/4 cup caramel sauce (plus extra for drizzling)
Instructions
- Preheat the oven: Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Cream butter and sugars: In a large bowl, cream the softened butter, brown sugar, and granulated sugar until light and fluffy. Beat in the eggs and vanilla extract.
- Mix dry ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually mix the dry ingredients into the wet ingredients until just combined. Fold in the chocolate chips.
- Stuff the cookies: Scoop 2 tablespoons of dough, flatten it slightly, place half a Samoa cookie in the center, top with another tablespoon of dough, seal the edges, roll into a ball, and place on the baking sheet.
- Bake: Bake for 12–14 minutes until golden. Press toasted coconut on top, drizzle with caramel sauce, and cool on a wire rack.
