Ingredients

Dough:

  • 1 cup unsalted butter (softened)
  • 1 cup brown sugar (packed)
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups semi-sweet chocolate chips

Filling:

  • 10–12 Samoa cookies (cut in half)
  • 1/2 cup shredded sweetened coconut (toasted)
  • 1/4 cup caramel sauce (plus extra for drizzling)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Cream butter and sugars: In a large bowl, cream the softened butter, brown sugar, and granulated sugar until light and fluffy. Beat in the eggs and vanilla extract.
  3. Mix dry ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually mix the dry ingredients into the wet ingredients until just combined. Fold in the chocolate chips.
  4. Stuff the cookies: Scoop 2 tablespoons of dough, flatten it slightly, place half a Samoa cookie in the center, top with another tablespoon of dough, seal the edges, roll into a ball, and place on the baking sheet.
