  • 1 tbsp olive oil (organic, fairtrade)
  • 600 g salmon fillets (skinned and bones removed)
  • 200 g spinach (organic)
  • 6 lasagne sheets (organic)
  • 200 g mozzarella cheese (organic, grated or other hard cheese)

Sauce Ingredients

  • 300 g crème fraîche (organic)
  • Juice of half a lemon (organic, fairtrade)
  • 1/4 tsp nutmeg (organic, fairtrade)
  • 1 dash salt
  • 1 dash black pepper (organic, fairtrade, freshly ground)

To Serve

  • Remaining half of lemon (organic, fairtrade) cut into wedges
  • Green salad (optional)


Instructions

  1. Preheat the oven: Set your oven to 200°C (425°F, gas mark 7) while you prepare the salmon and spinach mixture.
  2. Fry Salmon and Spinach: Heat the olive oil in a frying pan over medium heat. Cut the salmon into bite-sized chunks. Fry the salmon pieces for 1 to 2 minutes until lightly cooked. Add the fresh spinach and fry together for an additional 1 minute until the spinach wilts.
  3. Prepare the sauce: In a mixing bowl, combine the crème fraîche with the juice of half a lemon, nutmeg, salt, and freshly ground black pepper. Stir well to create a smooth, flavorful sauce.
  4. Assemble the first layer: Spread half of the crème fraîche sauce evenly over the bottom of a lasagne dish. Place a layer of lasagne sheets over the sauce.
  5. Add the salmon and spinach: Distribute all of the salmon and spinach mixture evenly over the lasagne sheets.
  6. Top with cheese and second layer: Add another layer of lasagne sheets on top of the salmon and spinach. Spread the remaining crème fraîche sauce over this second layer.
  7. Sprinkle with mozzarella: Generously sprinkle the grated mozzarella cheese on top of the final crème fraîche layer.
  8. Bake the lasagne: Place the assembled lasagne in the preheated oven and bake for 35 to 40 minutes. The lasagne sheets should be tender, which you can check by inserting a knife into the center with little resistance.
  9. Serve: Once baked, remove from the oven and serve the lasagne warm, accompanied by lemon wedges and a fresh green salad to balance the richness.
