  • 2 lbs Brussels sprouts, trimmed
  • 4 cloves garlic, minced

  • 6-8 salmon fillets (3-4 oz each)

  • 1 tbsp dried oregano
  • Salt and black pepper to taste
  • 4 tbsp olive oil, divided


Instructions

  1. Preheat and Prepare: Preheat your oven to 450°F. Grease a sheet pan to prevent sticking. Trim the ends of the Brussels sprouts and remove any yellow or damaged outer leaves for the best texture.
  2. Toss Brussels Sprouts: Place the trimmed Brussels sprouts into a bowl. Add 2 tablespoons of olive oil, minced garlic, salt, and black pepper. Toss everything together until the Brussels sprouts are well coated.
  3. Roast Brussels Sprouts: Spread the Brussels sprouts evenly on the prepared sheet pan. Place them in the oven and bake for 14 minutes, stirring once halfway through to ensure even roasting and browning.
  4. Prepare Salmon: While the Brussels sprouts roast, season the salmon fillets with salt, black pepper, and dried oregano. Make space on the same sheet pan for the salmon fillets by pushing the Brussels sprouts to one side.
