- 6 cups mixed greens or shredded romaine
- 1 cup shredded red cabbage
- 1 cup shredded carrots
- 1 red bell pepper, thinly sliced
- 1 cucumber, sliced
- 1/4 cup chopped green onions
- 1/4 cup chopped cilantro
- 1/4 cup sliced almonds or chopped peanuts
- 1 tablespoon sesame seeds (optional)
Asian Dressing
- 3 tablespoons rice vinegar
- 2 tablespoons soy sauce (or tamari)
- 1 tablespoon honey or maple syrup
- 1 tablespoon sesame oil
- 2 tablespoons olive oil
- 1 teaspoon grated fresh ginger
- 1 clove garlic, minced
- 1/2 teaspoon sriracha or red pepper flakes (optional)
Instructions
- Combine Salad Ingredients: In a large bowl, combine the mixed greens, shredded red cabbage, shredded carrots, thinly sliced red bell pepper, sliced cucumber, chopped green onions, and chopped cilantro. Toss gently to mix all the fresh vegetables evenly.
- Prepare the Dressing: In a small bowl or jar, whisk together the rice vinegar, soy sauce or tamari, honey or maple syrup, sesame oil, olive oil, grated fresh ginger, minced garlic, and optional sriracha or red pepper flakes until the ingredients are fully emulsified and smooth.
- Toss Salad with Dressing: Pour the prepared Asian dressing over the salad just before serving. Toss thoroughly to coat all the salad ingredients evenly with the flavorful dressing.
- Add Crunchy Toppings and Serve: Sprinkle sliced almonds or chopped peanuts on top of the salad, and optionally, add sesame seeds. Serve the salad immediately for the freshest taste and best texture.

- Add grilled chicken, tofu, or edamame for extra protein.
